One Minute Muffin

My Aunt told me about this recipe and so I did a bunch of googling and found quite a few variations. I've listed the one that I've been using the most.

The Ingredients:

1/4 cup flax meal (I've seen it using Almond Flour and 2 tbs of flax meal too, but I haven't tried that yet)
1 egg
1 tablespoon oil (I've been using regular oil, but I've seen it using butter, coconut oil or walnut oil too)
1/2 teaspoon baking powder
1 teaspoon cinnamon (I've seen people say to use pumpkin pie seasoning as an alternative, I haven't tried it yet)
1 1/2 teaspoons honey

Optional: 1 tablespoon fresh or frozen fruit (I've seen blueberries, smashed banana, shredded apple, and sweet potatoes, I don't usually even add anything unless I have something just setting around)

The Directions:
I just add everything to a coffee cup and mix until it is all combined. Then put the cup into the microwave for one minute. Boom. Muffin.

Ingredients
Everything in one coffee cup
All mixed

After a minute in the microwave

Muffin out of a cup and ready to eat!
